Pecan Pie Muffins.... yummy!
Hey yall! I just wanted to pop in this afternoon and share this yummy recipe with everyone!
Pecan Pie Muffins! Yall these are scrumptious! And so simple to make. I love having these ready for gifting and ready for a late night snack! The recipe makes 1 dozen.
Pecan Pie Muffins
1 cup packed light brown sugar
1/2 cup All Purpose flour
2/3 cup butter, softened ( I like to use real butter, salted)
2 eggs beaten
2 cups chopped pecans ( or Walnuts!)
Preheat oven to 350 degrees. Combine sugar and flour and mix well. Add in pecans and toss well, then add softened butter and eggs. Stir until well blended. Fill muffin cups 2/3 full. Bake 15 - 18 mins or until toothpick inserted in center comes out clean. ( I had to bake mine for almost 20 minutes.) Let cool or slather with butter while still hot and enjoy! :)
They are also yummy when cooled.
